  • Leek and Mushroom Tart
    This savoury tart is a great idea for Sunday lunch or weekday supper. I believe it can also be called a quiche.
    I tried other ingredients as well, like broccoli, red pepper, and ham. Of course you can try a vegetarian version, with no meat at all.
    You can make pastry yourself, for example from this recipe, or simply use ready made shortcrust pastry.


  • Polish Tortellini with Wild Mashrooms
    Those tortellini with wild mushrooms are typically served with classic borscht, a beetroot soup at Christmas Eve dinner.
    You can always make them with boiled meat, and serve with clean broth.


  • Saffron Milk Cap / Red Pine Mushroom Salad
    If lucky enough, one can find one the most delicious mushrooms in the forest - commonly known as saffron milk cap or red pine mushroom. And what to do with such treasure?

    Except classy pan-fried (on butter, lightly salted) and delectable marinated saffron milk caps (see Mushrooms in Vinegar) the next choice would be a salad! A truly delightful side dish for a seasonal supper.
