Eggs with Guacamole |

Something new for breakfast - eggs a'la Benedict on a toast with guacamole!
- 1 egg per person
- toasts
- 1-2 rape avocados (I had 2 small avocados for 2 toasts)
- small onion
- for seasoning: salt, black pepper, malt vinagar, lime juiced
- Finely chop onion. Peel avocado and mash with fork. Add salt, black pepper and lime juice to taste. Well combine all ingredients.
- Fill a medium saucepan with half of litre of water and bring to boil. Add splash of vinegar and pinch of salt.
With a spoon make a whirl and carefully put one egg into the water. Cook for 3 mins.
- In the meantime toast the bread.
- Remove egg from water with a slotted spoon, and put aside on kitchen paper to soak the water down.
Spread the toast with generous layer of guacamole, on top put one egg. Slightly salt on top and serve immediately. That simple!
