Oven-Baked Carp |

Carp, a popular fish for Christmas Eve, here served hot, baked in oven.
Receipe comes from my friend Justyna.
A very simple and tasty fish dish.
Conveniently prepared a day before, warmed in oven just before serving.
- carp filleted and cut into portions
- salt, pepper to taste
- onion cut into half slices
- butter
- flour, oil for frying
- Prepared fish, if required, salt over and keep refrigerated.
- Check saltness, and dust with black pepper. Cover lightly with flour, and fry in oil. In the same pan fry the onion.
- Lay the fish in an oven proof dish, cover with fried onion. Keep in fridge till next day.
- On the day, take away from fridge to warm up to room temperature before baking.
- On fish put some butter, and bake in oven warmed up to 180C for 20-25 mins. Serve hot with some bread.
