Herring Salad |

This is a mayonnaise based salad with herrings.
Often served in winter months, when one prefers somewhat heavier dishes.
Generally idea similar to this classic vegetable salad, but with distinct adition of herrings taste.
- 2 hard boiled eggs
- boiled 2 potatoes
- sour-pickled cucumber
- handful of green peas
- 2 herrings (I use matjas)
- mayonnaise (can be mixed 50/50 with plain yogurt)
- while onion (half if big one)
- salt, black pepper
- All veges and egg cut into small dices.
Cut herrings into pieces.
Briefly cook peas from frozen in a pan with boiled water or with butter on skillet. If you use tinned peas, drain water.
- Carefully mix all inredients with mayo. Add some salt and pepper to taste.
- Ready!
Serve with bread and butter.
