French Salad with Goat Cheese
How do travels educate! :-)
In France, I had numerous occasions to try delicious salads. Here, I present an interesting way of enriching a standard green salad - with warm goat cheese! The delicious mustard-honey salad dressing comes from Agnieszka Maciag's book "Smak zycia" (The Taste of Life).

Ingredients
  • pack of green leaves mix
    I like to add rukola leaves
  • tomatos, for example cherry tomatoes
  • if you like - black olives
  • for souce:
    4 tbsp olive oil,
    1 tbsp French mustard,
    2-3 tbsp lime juice or balsamic vinegar,
    2 garlic cloves, crushed,
    2 tsp light honey,
    pinch of salt
  • salt, black pepper, cayenne pepper
  • one toast per person
  • soft goat cheese (can be with herbs, or plain)
Directions
  1. In a ball or jar pour olive and mustard.
    Whisk together all ingredients untill combined into emulsion.
  2. Prepare your greens and veges: wash and tear up if necessary, cut tomatoes, add olives.
  3. Lightly toast the bread. and cut into halfs.
    Place slice of goat cheese on tasts and grill slightly.
  4. Arrange the salad in a medium bowl or on plates and add enough dressing to moisten.
  5. Serve with warm toasts.
